At a recent family gathering, I got to savor one of the tastiest fish barbecues ever. This was prepared by Sunday, a pro in the fish barbecue business. I found myself going back for One……..Two……….Three helpings of whole fish. Call it gluttony, but if you ask me I’d say the fish was “fantabulously gooooood!!!” . It was spicy, hot & full of flavor. I first got drawn to his barbecue stand by the aroma and after a little chitchat; he was kind enough to show me how it’s being prepared. Let’s take a look below

Ingredients:::
• 3 Whole Croaker Fish
• 3 tbsp. freshly ground Red Chili pepper
• 1 tbsp. freshly ground Black pepper
• 2 tbsp. Vegetable Oil
• 5 cloves Garlic,minced
• 1 tsp. Salt to taste
Directions:::
1. Preheat the barbecue grill 30 mins prior to cook time.
2. Remove the scales from the fish and gut; Wash thoroughly
3. Place the fish in an aluminum foil and make about 6 slashes on each fish with a sharp knife (This is to help the seasoning penetrate into the fish easily)
4. Mix the peppers in a bowl, Add the chopped onion, Minced garlic, Salt and 3 tbsp. vegetable oil; Stir to incorporate the mixture together
5. Rub the pepper mixture all over the fish with a brush and cover with the aluminum foil; Leave to marinate for 30 mins (While the barbecue grill heats up)
6. Place the fish on the barbecue grill in the fish holder and leave to cook for 6 mins on each side.
7. Garnish with salad and serve.

DeleteHello Dobby,I dnt hv a grill but I would lov to try this out.a collegue just told me I can use my microwave nd it wil com out well.pls do u tink is tru?
ReplyDeleteHi Mrs morgan,
DeleteUsing a Microwave to Grill is a total No No (Except you are using a conventional Microwave/ grill, though it still won't have the same effect as when you Use a Real Grill). This is because Grilling and microwaving are two different cooking techniques. When Grilling, Radiant heat (above 400 degrees F)is applied to whatever is being cooked while Microwaves do not apply radiant heat to foods. Also, Grilling concentrates the fish flavours, colour & texture while microwaved fish wouldn't do that and you might end up with a bland fish. Hope this Helps.
Nice job, looking greatly as my work******

DeleteDobby pls can I use cat fish for babique
ReplyDeleteYes you can. But you'd also need to use a foil to wrap the cat fish before cooking. That way, the catfish wouldn't scatter while it cooks.
