Most times when i make soy milk, i make it traditionally in my kitchen from scratch. Luckily for me, the soya bean seed is always readily available whenever i need it. It's mostly used as a beverage which can be sweetened and served hot as tea for breakfast or cold. Please take note that soya bean milk and soya bean powder are totally different.
Soy milk is the most nutritious and best protein source because it has well balanced amino acid levels than other vegetable sources. it's rich in essential fatty acids, amino acids like lysine and methionine, fiber, vitamins and minerals. This is one drink which is highly essential for kids due to its nutritious benefits and can also be taken by diabetics.
Homemade Soy Milk Recipe
•Prep time: 6hrs 30mins
•Cook time: 20 mins
Utensils Needed:::
• A pot
• A sieve with handle
• A Cheese/Pap cloth
Step 2: Drain and rinse the seeds with clean water. Rub the seeds between your hands to de-haul it till the skin removes(Just the same way beans is de-hauled for moi moi ). This process is very important as the skin is more of fiber and insoluble. Sieve out the chaff and rinse with clean water several times. Pour the washed seeds into a blender, Add some water and blend till smooth.
Step 3: Place the Sieve with handle on the pot and place the pap sieve cloth within. Gently pour the blended soya bean slurry into the pap sieve. Squeeze the Liquid filterate into the pot. The chaff can be reused by placing in the blender again with water, blending and squeezing till all the milk is extracted.
Step 4: Place the pot with the filtered soya milk on fire and cook on low heat for about 15-20mins till it starts to boil. While it cooks, keep stirring because it has the tendency to curdle if you don't. Sieve once more (Hot filteration) to remove the insoluble soy pulp fiber (Okara)and leave to cool.
Step 5: Add your sugar and flavor essence and mix. Serve warm or Refrigerate and Serve Cold

Soya needs to be given heat treatment before use. This is done to destroy the soya bean trypsin inhibitors that has unfavourable effect on growth and utilization of soya as well as sterilize the milk. If not given heat treatment before use, it could retard growth and lead to death due to toxicity. Heat treatment could be done by boiling or toasting to ensure the heat penetrates into the seed. it's only after heat treatment that you can now dry, grind or process into any edible form of administration. By giving heat treatment, your main aim would be to destroy the inhibitor but not denature the protein therefore you have to work at an optimal temperature between 120-150°C or probably boil for about 15-20 mins (Chinadi O, 2014)

ReplyDeleteGood post
ReplyDeleteThanks innocent!
DeleteDoes this heat treatment apply to the one used in making soy milk? Cos from ur preparation steps u didnt toast it.
ReplyDeleteHi Anon! Sure the heat treatment is applied in the preparation of soy milk through Boiling. Toasting of the seed as a form of heat treatment is applied when preparing soya bean powder (The type used for tea or pap in nigeria). I used boiling as a form of heat treatment in this preparation.
Deletevery simple. but what if its in powder form already, do you needto boil or just add cold or hot water to it
ReplyDeleteHi chidi,
DeleteIf it's in powdered form already, there's no need to apply heat treatment any more cos the preparation of soya bean powder involves heat treatment by toasting in an oven or open flame before being de hauled and grounded provided its from a good source. All you need to do is just add Hot or cold water and you are good to go :).
Nice post but can you tell us exactly when you boiled it? And won't that change the taste? Thanks
ReplyDeleteIn step 4 above, you boil it after filtering. Boiling it would change the taste to a more refined one.
DeleteThanks for this recipe,i have been looking for how to make soy milk for my kids. Will definetely try it.
ReplyDeleteyou are welcome Anon, Do let us know how it goes :)
Deletei made this when i was in naija, though i didnt peel the beans, and i also added ginger and cloves... minus sugar or any sweetner. it came out so so nice
ReplyDeleteHmmm!!! That's a first. You give it a try...thanks anon!
DeleteReally nice, but please what are the benefits of soy milk for adults?
ReplyDeleteHealth Benefits of soy milk:
Delete* Soy milk is rich in protein, vitamins and minerals. Protein helps in body building.
* Soy milk has little saturated fat and no cholesterol(This improves the heart health) plus its rich in dietary fiber (which makes you feel fuller thereby promoting weight-loss).
Scientific Research has also shown that regular consumption of soy milk may lead to a decrease in low density lipoproteins wich is the "bad cholesterol" and an increase in high density liproproteins which is the "good cholesterol".
* Soy milk does not contain lactose which makes it a good alternative for lactose intolerant people
Thanks Dobby.. I was going to call a friend to help me with the process of making this.LOL. But now, with this post, I can fly. You are the best!
ReplyDeleteGlad you found it useful Hazon :)....Anytime!
DeleteThanks Dobby. I just made mine from scratch at home yesterday. I like the fact that I can use my blender. Previously I had to take it out for grinding. Now I can make it as frequently as I wish. My kids just love it. Love your blog
ReplyDeleteGlad it turned out fine kadasher :), thanks for the feedback.
DeleteHI DOBBY, I SURE WIL TRY DIS OUT. PLS, I TUK MY DRY SOYA BEANS 4 GRINDING BT I CODNT WAIT COS I HAD SOMETHING ELSE 2 ATTEND 2. WEN I CAME BK, D GUY HAD ALREADY FINISHED GRINDING IT. ReplyDeletehmmm!!! i doubt if there is anything that can be done now. It's not advisable to use it anymore because what you really need is the endosperm and not the chaff.

ReplyDeleteAs long as it was given heat treatment, you have nothing to worry about. Yes it's good although that's a very long process.
DeleteFor how many days can homemade soy milk be preserve and remain healthy
ReplyDeleteHello Debbie, In the refrigerator, it can be left for 7-10 days. In a freezer, it can last for 3 months.
DeleteThat's great information. Thanks for sharing this blog. I did a search and found your blog and glowing review. It's been a big help! Thanx!
ReplyDeleteThanks for the feedback Sophia. Glad to have you here
DeleteHello Dobby, thanks for this post though, my soya milk didn't turn out fine. After filtering, I kept stirring it while it boil for like 30mins. When I leave it for sometime, I notice that water go separate while d soya milk form one kind funny substance like d way spoilt yoghurt looks like. Don't really know what I did wrong. Thanks.
ReplyDeleteThat's what happens when you don't de-haul the skin of the soy-beans properly. This process is very important as the skin is more of fiber and insoluble. Next time you're making it, remove the skin.
DeleteJust stumble on it,i wud surely try it cos d recipe is straightforward
ReplyDeleteThanks whummy. Do let us know how it goes.

ReplyDeletejust tried it it came out well thanks a million.
ReplyDeleteHello Dobby, i already have my soy bean grounded with the commercial grounding machine, i still feel like boiling it on fire bfore taking, hope ther is no fault with that?...
DeleteHi Anon, there's really no need boiling the powdered soya bean because it must have gone through heat treatment already.
Deletehello dobby, thanks for for your recipe. i learnt how to prepare it in my school days in osun state, but how else can preserve soy milk, at least for a few days cos the light in my area is not regular. thanks bukky.
ReplyDeleteHi Anon, preservation can mostly be done by refrigeration and even when it's refrigerated, it's prone to spoilage. Companies that do preserve soy milk for a longer period of time store it in tetra packs lined with foil paper. These are usually ultra pasteurized at high temperatures and sealed in extremely sterilized environments which makes it almost impossible to do at home.
DeleteHi, I want to roast the soybean first before making the milk... It tends to improve the flavour. How do I go about it?
ReplyDeleteIt'd be difficult extracting milk from roasted soy bean. Once it's roasted, the next process is usually to convert it to powder by milling.
Deleteexactly where can you start out? First thing you can certainly

Nowadays you would like to introduce community, which means you turn your key words to some long-term key word using location, such as"essential oils London" or even"essential oils in New York" as illustrations
